BEST ROASTED EGGPLANT POMEGRANATE DIP!

Bright sweet & tart pomegranate flavours brighten up this dip & fresh herbs put it over the top! We love pomegranates anytime of the year, but we especially love to explore creative ways to include its vibrant flavours in recipes around the Persian New Year (Nowruz) on the spring equinox coming up on March 21st.

This Roasted Eggplant Pomegranate Dip is an easy crowd pleaser!

YOU WILL NEED:
2 eggplants
3-4 garlic cloves (roasted)
2 Tbsp. tahini
¼ cup pomegranate juice (we love Organic Ruby from @narazimportexport !)
1/2 tsp Salt
Pinch Cayenne pepper
1 tbsp lemon juice
For Garnish: Pomegranate seeds, pomegranate juice, crumbled feta & chopped mint/parsley

HOW TO MAKE IT:

1. Prick the skin of the eggplants, then wrap in foil.
2. Chop the top off a bulb of garlic, drizzle with olive oil, then wrap garlic in foil.
3. Bake eggplants and garlic at 400F for 45 min or until soft, removing the garlic after 20 min.
4. Let eggplant cool, then cut into 2 lengthwise pieces and remove the flesh with a spoon.
5. Heat the pomegranate juice over medium heat until the volume is reduced by half. Stir often and watch that it doesn’t burn. Remove from heat. Save 1 tbsp for garnish.
6. Put the eggplant, 3-4 roasted garlic cloves, pomegranate juice and remaining ingredients
into a blender or food processor & whizz until smooth. Refrigerate for at least 2 hours.
7. Garnish with extra pomegranate juice, feta & herbs

Suggestion: Serve with warm flatbread or chips for dipping
