Rules around food are so taxing and constraining. If breakfast is a time of day when your little one eats well, then use this time to pack in some nutrition. Sometimes mornings are when babies are their most alert and playful, so it’s also a good time for them to be given the opportunity to explore the textures and tastes of food. Make food exploration an activity! When we asked our friends at Cerebelly for some tips on keeping mornings easy and nutritious, they had 3 amazing, veggie-forward ideas that we are excited to share with you!

1. Beet, carrot & blueberry oatmeal 


What you’ll need:

*Quick oats
*Hot water
*Fresh or frozen blueberries
*1 pouch of Cerebelly Beet Carrot Blueberry
*Milk or oat milk

Directions:

  • In a small saucepan, mix hot water, ¼ cup milk, 1 pouch Cerebelly Beet Carrot Blueberry, and ¼ cup mashed fresh blueberries or frozen blueberries.
  • Warm to a simmer. Mix well.
  • Add ½ cup oats to the above mixture and let cook on the stove for 3 min or until oats are soft.
  • Let cool before serving.

2. Sweet potato & mango french toast


What you’ll need:

*3 slices of soft whole wheat bread, challah (egg bread), or soft sourdough bread
*1 whole egg 
*3 tbsp milk or oat milk
*1 pouch of Cerebelly Sweet Potato Mango 
*Frozen peach slices
*Cinnamon (to taste)
*1 tbsp butter for pan

Directions:

  • Mix 1 egg with 3 tbsp milk or oatmilk. Add 1 pouch Cerebelly Sweet Potato Mango, and ⅛ tsp cinnamon (or more if you like). If the mixture is too thick add a little more milk.
  • Soak bread in the above mixture for 30 seconds, just until the bread soaks up the mixture.
  • Heat butter in a shallow pan, add bread to pan and cook until egg coating is cooked on both sides, about 3 min/side.
  • Fruit options: serve with slices of defrosted mangos and/or peaches, or mash the fruit (defrosted and warmed slightly) and serve spread on top of french toast.

3. Eggy kale scramble with cheddar and avocado


What you’ll need:

*4 eggs
*3 tbsp Milk (or milk alternative)
*1 pouch Cerebelly Kale Sweet Potato Apple
*Shredded cheddar cheese
*Sliced avocado
*1 Tbsp butter

Directions:

  • In a large bowl, beat eggs, then add 3 tbsp milk and 1 pouch Cerebelly Kale Sweet Potato Apple. Mix well.
  • Heat 1 tbsp butter in a shallow pan on medium heat. Add egg mixture, and scramble.
  • Shredded cheese options: add to top of cooked scrambled eggs and let melt, or serve on the side and let your baby pick up shredded pieces.
  • Avocado options: serve on the side in slices, or mash and feed with a spoon.
