This salad comes together with only 6 main ingredients and nothing fancy. Once you have chopped up the watermelon you are pretty much done in 5 minutes.
WATERMELON SALAD
- 1/2 seedless watermelon (cubed (about 8-10 cups))
- 1 cup blueberries
- 1/3 cup diced feta
- 2 tablespoons mint leaves (chopped)
DRESSING
- 2 limes (juiced)
- 2 teaspoons olive oil
- 1/4 teaspoon sea salt
- Combine the fruit, mint, and cheese in a bowl.
- Carefully toss in the dressing
- Serve immediately or chill for 1-2 hours.
