This salad comes together with only 6 main ingredients and nothing fancy. Once you have chopped up the watermelon you are pretty much done in 5 minutes.

Ingredients

  • 1/2 seedless watermelon cubed (about 8-10 cups)
  • 1 cup blueberries
  • 1/3 cup diced feta
  • 2 tablespoons mint leaves chopped

DRESSING

  • 2 limes juiced
  • 2 teaspoons olive oil
  • 1/4 teaspoon sea salt

Instructions

  • Combine the fruit, mint, and cheese in a bowl.
  • Carefully toss in the dressing
  • Serve immediately or chill for 1-2 hours.
