Have you ever tried Eton Mess? It's a classic dessert from our British childhood that has all the key components of a fancy pavlova, but all crushed and mixed into one bowl. Sweet, crunchy, fruity...it has it all. This version turns tradition upside down by making it plant-based with the help of clever ingredients from GluteNull! We had never tried whipping aquafaba (chickpea water) to make a light whipped cream-like topping. We were blown away by the results and how easy it was. Our whole family couldn't get enough of this modern take on tradition!
What is Aquafaba?
The word "aquafaba" means bean water. Yes, that's right - it's the liquid in a can of chickpeas! Here we used GluteNull Aquafaba from boiled chickpea water that's been made in-house using special methods to concentrate the Aquafaba and whips up in minutes. This magical vegan ingredient can be used as whipped cream, to make your own vegan meringues, homemade vegan pasta, or as an egg replacer in baking. For our Eton Mess, we also used a package of Glutenull Vegan Meringue and this dessert came together in a flash!

PLANT-BASED ETON MESS DESSERT (VEGAN & GLUTEN-FREE)
Light, crunchy, fruity…this easy dessert has it all!
- 1 package GluteNull Aquafaba
- ¼ tsp cream of tartar
- 1-2 tbsp powdered sugar
- 1 package GluteNull Vegan Meringue
- 1.2 tsp vanilla extract
- 1 large container of raspberries or other berries
- Make your whipped “cream” by whipping the aquafaba and cream of tartar in a stand mixer until very thick. Add sweetener & whip until stiff peaks form.
- Add whipped “cream” to a large bowl, fold in raspberries, roughly crushed meringues, and serve in small bowls or adorable mason jars topped with extra raspberries & more meringue.
NOTE: It's best to assemble right before eating, as the meringue will go soft. We like to have everything prepped and combine just before serving!
This dessert make the perfect ending to a dinner of our gluten-free falafel sandwich with green goddess dressing!
